INLAGT SILL
#FOOD
- Herring was a staple of the fishing communities on the West Coast of Sweden’s islands, inlets, and archipelagos.
- A lookout would be kept for the abundant shoals off the shore, and boats would be dispatched to bring in the herring, smoked, pickled, or salted to keep households fed during the long, harsh winters.
- Many of the coastal towns also had industries and canneries that packaged and preserved the herring and supplied a lot of jobs for the locals.
- In Gothenburg, especially in the winter, you’ll find this traditional Swedish meal of herring presented in an endless variety of spices and sauces; everyone’s grandmother has her family recipe passed down from mother to daughter.
SNAPS
#FOOD
- The Swedes will pull out the Snaps for special occasions and holidays, such as Easter, Christmas, summer crayfish parties, and nearly any other cause.
- It’s edgy aquavit that may be flavoured with fruits or consumed straight up.
- The snaps from O.P Anderson go exceptionally well with the herring, cutting through the thick, oily flavour.
- You may hear a classic Snaps drinking song on my podcast about the Gothenburg podcast.
- A sip of Snaps will warm you up if you’re not a big drinker like myself, but a real Swede will down the Snaps with a hearty Viking toast, Skol!
OYSTERS
#FOOD
- We visited Gothenburg in December, which is the ideal time to sample the ultra-fresh oysters harvested off Sweden’s west coast.
- We had our oysters at Restaurant Gabriel in the Feskekörka Fish Market, one of the city’s best seafood restaurants (literally the Fish Church).
- Johan Malm, the owner, was the World Champion Oyster Opener in the 2010 World Championships in Galway, Ireland, so he knows a thing or two about oysters.
- Although there are various ways to serve oysters, Johan prefers to keep them as natural as possible, with just a touch of lemon to bring out the sea’s metallic flavour.
